2012 - July 19 - The opening of The Evil Czech Brewery (at the
former site of the Marmont Grille). Evil Czech Brewery founded by George Pesek and owner.
Evil Czech (the name derives from a playful nickname of Corndance owner
George Pesek (The name is a tongue-in-cheek nod to the owner’s Czechoslovakian
heritage ), who also launched the brewery) is Culver’s first full-blown micro brewery,
and offers a host of original brews for every taste, with food to accompany. |

Gordon Food Service Sales Associate (September 2004 – January 2011).

2013 - Culver’s Evil Czech Brewery makes Midwest Living’s 2013 “ It List"
The Evil Czech Brewery at Main and Davis Streets in Culver had the distinction of being named
to Midwest Living Magazine's "It List" for 2013.
An article and photo on the brewery -- located in what is believed to be the smallest town in
America to house its own microbrewery -- is one of 32 locales described by the magazine as
"can’t-wait-to-check-it-out quality (among the) best new places to play."

2013 - Jul 11 - Evil Czech Brewery is not leaving Culver, but is expanding into Mishawaka.
2014 - Mar 16 - Evil Czech brewery opens in Mishawaka - in a news release article the Culver
site was refered to as a minature version of what he really wanted and that it was a test run.
2015 - Sep 10 - Culver's Corndance - Evil Czech to close by end of September -

told The Culver Citizen he made the
announcement to his staff Thursday afternoon that
Corndance (located on Main Street) will close after Saturday, Sept. 26, and Evil Czech after the
27th. Staff members were offered jobs "up north," he added, referring to the Corndance Tavern on
Grape Road in Mishawaka, which the Peseks opened five years ago, and the Evil Czech Mishawaka,
which opened more recently. "The huge success in Mishawaka is the reason we have to close in
Culver," says Pesek. "The volume there just doesn't allow me any time to come to Culver and operate
it properly. I never wanted to be an absentee owner, and...since we opened in Mishawaka I've been in
Culver less and less."
George Pesek earned his reputation as a chef (he's the "Evil Czech" of the brewery’s namesake, a joking
reference to his high-pressure approach in the kitchen) on Navy Pier in Chicago before moving his family
to Culver. Evil Czech opened in subsequent years after Pesek took over the former Pinder's Restaurant site
on Main and Davis Streets, trying two prior approaches to menu and ambience before opening a
microbrewery at the site. Doing so had made Culver the smallest town in the US with a microbrewery....
The closed Culver location is Evil Czech brewmaster’s new laboratory, but Simon O’Keeffe is still heading down
there for work.
He was hired in April to be the local craft beer standout’s new head brewer and while much of his focus has
been on the main brewpub in Mishawaka, he’s been tasked with turning the smaller brewery in Culver into a
research and development facility — a place where he and his team can experiment with one-off and
non-mainstream beer styles.
